Sweet Potato, Roasted Pumpkin and Brown Rice Pilaf

Sweet Potato, Roasted Pumpkin and Brown Rice Pilaf 


Preparation Time: 50 min 


Ingredients: 
•1 cup dry brown rice
•1 medium sweet potato
•3 cups vegetable broth
•2 tsp. olive oil
•2 cloves garlic
•2 cups kale
•2 medium celery stalk
•Sea salt
•1 medium onion
•1 bay leaf
•2 cups pumpkin (cubes)

Directions: 
•Take a bowl and mix sweet potato, pumpkin, and oil in a
medium bowl.
•Place it in the oven and bake it for 10 minutes.
•Take a saucepan and heat the remaining oil in it.
•Add kale, onion, and celery. Cook it for 5 minutes and add
garlic in it.
•Add pepper and salt in it.
•Add rice broth, and bay leaf. Bring to a boil for 45 minutes.
•Serve
