Middle Eastern Rice Salad
Preparation Time: 10 min
Ingredients:
•1/4 cup mint
2 tsp olive oil
•1/2 Vidalia
•1/4 teaspoon salt
•1/2 cup dates
•1/2 teaspoon cumin
•3 cups brown rice
•Black pepper
•1/4 cup parsley
Directions:
•Take a large skillet and heat it. Add onion in it and heat it for
about 5 minutes.
•After that, remove it from heat and mix cumin, chickpeas,
black pepper and salt.
•Mix the mixture with rice, mint, parsley and dates.
•Serve it hot or let it cool at room temperature.
